Executive Chef, Nativo Kitchen & Bar
Miami darling and rising star Pablo Lamon (30) brings a wealth of worldly culinary experience to his role as Executive Chef at Nativo Kitchen & Bar. In his new role, Chef Pablo will be responsible for opening the restaurant at the newly renovated Conrad Miami hotel, including menu ideation and creation, as well overseeing culinary operations for the pool and in-room dining.
A native of Buenos Aires, Chef Pablo began his culinary education at the most awarded culinary institute in Argentina, Mausi Sebess, receiving a number of certifications and studying Restaurant Administration and Enology. After working for two years at the award-winning Palacio Duhau at the Park Hyatt, Buenos Aires, Chef Pablo accepted a position on-board Celebrity Cruises “Celebrity Silhouette”, where he travelled the world and expanded his culinary palate.
In 2013 the talented toque moved to Punta del Este, Uruguay, to work as Sous Chef at O’Farrell, an award-winning, locally sourced, fine-dining restaurant. After a short stint in Argentina, he moved to Miami Beach to open The Matador Room by Jean-Georges Vongerichten at The Edition Hotel. In 2016 Chef Pablo opened Employees Only, an upscale speakeasy and restaurant concept imported New York City in Miami Beach.
In 2017 Chef Pablo went onto accept a position of Chef de Cuisine in charge of Culinary Operations for Miami Beach’s 27 Restaurant and Broken Shaker at The Freehand. Later that year, Chef Pablo earned the highly coveted San Pellegrino Top 10 Chef under 30. In 2018 Chef Pablo took part in Season 16 of Bravo TV’s Top Chef, impressing the judges and earning respect of his fellow chef castmates.
Chef Pablo brings well-rounded experience in small- and large-scale culinary operations to his role at NKB, where his creativity and innate understanding of flavorful, global cuisine made with the highest quality ingredients is sure to impress guests.
